I am making a strawberry cupcake with ganche and bettercreme frosting with banana flavoring and a maraschino cherry and nuts on top.  Do I have to refrigerate??  I just don't know if I can a maraschino cherry get to room temp for a couple of days.

If your concern is the cherries, no. Maraschino cherries from the jar can be left out up to two weeks with no problems. If they are fresh cherries, I would wait to put them on until you are about to deliver or serve them. As for the cupcakes themselves, if you are not refrigerating them then make sure to store them so that they won't get stale. Under a cake dome, in a container, etc.
