Problem Making Dragees Stick Onto Fondant

Hi Everyone!

 

The last cake I made using a diamond quilted pattern I added silver dragees in the intersections using piping gel (actually those little Scribblers that you can buy which I assumed was piping gel or royal icing) and the dragees kept popping off everytime the cake was moved.  Any other suggestions?  I have another similar cake to do for sunday.

I don't know what the icing scribblers are actually made of, but I always use either piping gel or royal icing.  I may lose one or two, but never more than that.

Make a SMALL INDENT  at each intersection  - with the rounded end of a FINE modeling tool, or brush. Pipe a dot of royal icing into this space. Using a food safe tweezers - pick up each dragee and position in place. Good luck!

I do this...  I poke a little indent, where I will place the dragee, then I use gumglue to attach...  And using the tweezers is a HUGE help... they even make some that have a rubberized tip so you can grip the little dragees!

Thanks HappyCake10609 for the info on the rubberized tip tweezers - Just did a Google search for Pearl/Dragee Tweezers, which are available on-line at www.kitchenkrafts.com These tweezers have a tiny cupped rubber tip perfect for picking up sugar pearls or dragees - makes placing tiny decorations much easier than using your fingers!!!
