Looking to add some new items to my outdoor farmers market... I want to do bacon brownies and pancake cupcakes with bacon in and on frosting. Would this require refrigeration or a need to keep cool?

AMy health inspector told us in our food safety class that as long as bacon is fully cooked it is shelf stable indefinitely. He told us the way to tell if it is cooked thoroughly (which dries out the moisture that would make it spoil) is to hold it up by one end. If it sticks straight up, it is perfect. This in in Kentucky, no telling what crazy laws you may encounter, but it is "cured" and like beef jerky after it crisps.
Yikes... "indefinitely"? Still, I agree that I think you would be OK to use fully cooked bacon in your products without the need for constant refrigeration. Have you thought about candying the bacon? Just cook it in the oven with some brown sugar. It's delicious, and the sugar is going to help inhibit bacteria growth even more.
