Choco Cake Wit Ganache

AI want to make a Choco cake with ganache in the center can I cover it with pink fondant and stick it on with apricot jam ? And will it keep well if I bake the cake and fill it in Thursday leave it in the fridge, and put the fondant on Friday morning for the party on Saturday lunch time

I'm not sure if you meant that you are only going to fill the cake with ganache and then put in fridge until Friday.  If you are not going to ice the cake in ganache as well, it will dry out in the fridge.  If you fill and completely ice the cake in ganache, it will be fine in the fridge until the next day.  The ganache will seal the cake, just make sure you have a good layer of ganache all over the cake and you don't leave any cake exposed. 

 

I usually just mist the ganached cake lightly to give the fondant something to stick to but you can brush a small amount of apricot jam and the fondant will stick to that.  But I wouldn't try brushing the naked cake with apricot jam and covering that with fondant.  Definitely needs to be iced first.
