AHi I have a customer order for a 4 tier wedding cake all sponge but different flavours But they want to keep top 2 tiers for there anniversary they will be chocolate flavoured and strawberry flavoured can anyone tell me if they would last for one year in freezer (they will both be covered in fondant icing)

I know  a cake covered in buttercream and covered in saran wrap then wrapped in foil is fine in the freezer for a year. I have frozen a fondant covered cake for a few days and it was fine. There is a thread on CC somewhere about freezing a decorated fondant covered cake for 2 weeks. I am not sure if you can freeze a fondant covered cake for a year. I am guessing that is all in the way it is defrosted. Usually you take the cake out of the freezer and put the cake in the fridge and then take out for about 15 minutes to let the cake breathe I have read. Then you put it back in the fridge for awhile. I am sure someone on CC has the right answers. Good Luck!

I personally don't like the idea of a year-old frozen cake.  But I know that's tradition and all. I made a wedding cake for my niece and just told her I'd make her a fresh anniversary cake on her first anniversary.  She loved that idea.

 

But her in-laws did actually save the top tier and froze it for her anyway.  They said it was good, just a little dry.  It was covered in fondant and I'm not really sure how they stored it.
