Hmm. My understanding is that ganache is chocolate by definition. Given that I don't eat chocolate, I wouldn't mind in the slightest being proven wrong.

Ganache is chocolate, but it can be flavored.  Add extracts, liqueurs, or infuse  the cream before boiling.  You can stir in jam, zests, liqueurs and extracts to the final product as well.  Mint ganache is awesome.  so is peanut butter or almond.  White chocolate ganache can be flavored strawberry or raspberry by soaking berries in the cream over night and then straining before use.  Orange ganache, with either dark or white chocolate is also really good and might go very nicely with vanilla cake.  One of my favorite cakes is orange cake with dark chocolate orange ganache.  Make up some ganache, and then take small amounts to play with.   Good luck.

I like dark chocolate with raspberry, hazelnut, kahlua.  White chocolate and cherry, lemon, or mint is awesome too.
