Hi, New to the cake decorating scene and was wondering how to cut out different shapes without a mold?

AHi. You could print a shape, cut it out and the place it on top of your rolled out fondant/gum paste/modeling chocolate (whichever you prefer) and use an exactly knife or some other sharp utensil and cut around it. You can also use cookie cutters.

ARoll out your fondant thin, place in freezer for about 5 minutes, then cut with exacto. Freezing the fondant helps when cutting out intricate shapes, it keeps the fondant from stretching.
