My Cake Is Sweating Bad And Need To Cover It With Fondant Today

AHello I am new and this is my first bikini cake and first fondant cake. Did a lot of reading prior to baking the bikini cake and watching YouTube videos. I bake the cake ahead of time frosted it with crusted Butter cream icing and placed it in the freezer after I place to plastic wrap to cover it well. A few days later I removed the cake from the freezer and placed it in the frig after removing plastic wrap i then lightly placed foil to keep it from drying out. I noticed that cake was sweating really bad so after a few hours I decided to remove the cake from the refrigerator and set it on the table and watch it. The sweaty didn't stop! :-( I was hoping that the butter cream would dry a little and crust. No luck so I decided to remove all of the icing off the cake wrap it and place it back in the refrigerator. So i am concerned about icing again I have to cover this cake today with fondant for a party for 6 PM. I made homemade marshmallow fondant. To cover this cake does it need to be cold when placing icing and does the cake -incing need to be cold when I placed the fondant? I don't want it to sweat again. Please advise what I need to do next the cake has no icing and it is at room temperature now so is the butter cream. Do I ice both at room temp? Do I place in frig after icing to set for fondant to be placed and how long? Thank you so desperate:-( would post picture but don't have URL for it.

trista--i'm sorry you are having these difficulties

 

i think that maybe you should keep everything at room temperature and hope for the best

 

hopefully the fondant won't weigh the cake down too much

 

but yes--you need to buttercream then do the fondant

 

i think i'd avoid the frige and freezer since it stirs up so much condensation

ASo a long wait I decided to just remove the crumb coat off the cake wrap it and place it in the frig. I left the icing in sealed container and left it at room temp. I was stressed I did not want this to be a disaster as it was my first request for a cake and my first bikini boobie cake or sculpted cake ever. It took 9 hours to put it together I finished 45 min. Before the event and I was tired. I took cake out of frig at 4am day of event left it in wrap until 9:30 am I removed clear wrap and started to place buttercream on cake both at room temp. It worked . I then worked the fondant mmf which I had problems with it cracking. Uhh I was getting nervous 3 times was a charm thank goodness for the help of my little girls who helped me lift it over the cake. Wala

APart 2- wala- finally did it.. Hurray then I added final touches. Here it is my first sculpted cake and rfirst request from a client.. So now I know the key word room temprature.
