I want Santa to give me a book on gluten-free cakes.  I love books that are more than just recipes and explains the science behind the recipes.  Can anyone help me complete my letter to Santa by providing their reccomendations for a gluten-free book that takes a significant look at cakes and cupcakes?

The baking gluten-free recipe book by Annalise Roberts has lots of cake recipes. Plus cookies, breads, etc.

 

Santa should also buy you a BIG bag of xanthan gum and a good sized one of guar gum.

I was thinking about that one! Thanks! Got the gum guar and xanthan gum from some failed experiments on making vegan marshmallows.

I can strongly recommend Artisanal Gluten-Free Cupcakes by Kelli & Peter Bronski.  Have learned much from this book.
