I was wondering what is the better way to keep a cake before you have to decorate it. Is it better to store in refrigerator or freezer. I will be baking on Monday 3rd and decorating on Sat. 8th.

For that length of time do put it in the fzr. Wrap it well. I usually just put mine in a plastic bag and they do just fine. You don't want a cake sitting at room temp for more than 3 days (total!) and the longer you have it the less time the customer has to use up any leftovers. It is not advisable to 'frig cake - it dries it out :(
