I am doing a cake to take with us for Thanksgiving. I am trying to use my time wisely, as I am a graduate student as well. How long in advance can I carve a cake (I'm doing a football helmet) and freeze it? Since it's for Thanksgiving, would it be too early now ??

Thanks in advance,

Nicole  :)

You can carve and crumb coat the cake now, cover in plastic wrap and freeze.  Leave the plastic wrap on when you thaw the cake so the moisture is on the outside of the plastic wrap. ps...if you decorating in buttercream you can put in the freezer for about an hour to set the frosting, then wrap it in plastic and put back in the freezer.  Thaw in the plastic. Good luck, sounds cute!!
