I'm going to be making some chocolate cupcakes for work for Halloween next week. My plan had been to put some marshmallow filling inside and have it colored dark red.... I have trouble making icing/anything white RED. It usually turns out pink or dark pink. Any suggestions or product that will make an icing red without having to use a large amount of color??

Americolor gel in Super Red works great.

I know people have tried this with buttercream and it has worked. Maybe it will work for you too.

Colour your icing several days before you need it. The colour will deepen. You can also start with a pink and then add your red. If I want red royal icing at Christmas, i do the colour a couple of days early, same for black.
