Hi All,

I have heard many different tips on how to store cake for an upcoming events. In order to have enough time to decorate. I have a wedding coming up and I was wondering how I should store the cake's tiers. The cake will be frosted with buttercream and then covered with fondant.

Some of the tips I have read suggest freezing the cake after butter creaming the layers. Other suggestions, say to store the cake in a dry, cool dark place.

I am trying to avoid the cake from drying out. Any tips you guys could offer, would be very helpful.

I haven't check out that link but....Freezing layers of cake as much as 2-3 months in advance is very helpful icon_smile.gif You can also fz b'cream. Just be sure when you put the cake into the fzr, you put it on something *flat* - if necessary, on a cookie sheet until it is fzn solid before longer storage.

I still have to read through all thoseone of these days. I have frozen the occasional cake, but have forgotten to test for anything. I regularly just make cake, put the frosting on, and eat an hour laterlol
