Hi u all great bakers

i have just received feedback from two clients i made vanilla cakes for last week.The first one said her cake was tasty the day she collected the collected the cake but second day inwards the cake was flaking off and the whipping cream was separating,she said the cake looks like its about to fall apart,it cracking.
Second client said her cake tastes like stale bread,and its just falling apart.

Surely two clients cant be wrong,what could have gone wrong.i make my cakes with vegetable oil because i struggle with the creaming method,could it be that.

am so discouraged and don't even have energy to finish on the cakes am working on for the weekend.its pretty hot where i am,could it be the heat.i don't know.

I'm so sorry this happened to you. I wonder how they are storing the cakes the second day? Are they air tight, refridgerated? This will all effect how the cake tastes the next day. Why don't you make yourself the same cake and look at the results for a few days. Does the whipping cream seperate? Again, how long was their cake out? It might be that they just need clearer instructions on how to store their cake if it isn't all eaten on the first day. Usually oil makes cakes more moist so I wouldn't jump to the conclusion it's immediately that it's your fault! Good luck!

Sorry this is happening. It appears that you are an experienced baker. If these cakes were done with the recipe you've used in the past with success, you need to figure out what is different. Is everything the same on your end - exactly the same ingredients, methods, storage? If so, it must be something happening after the client picks it up, so one would think storage.By the way, did you or have you recently tasted your vanilla cake?
