So I decided to earn some time in finishing a wedding cake for next weekend by working on it this weekend.

I have the layers frozen and I plan to add the filling and crumb coated this week-end, then freeze back for the next weekend when I'll cover in fondant.

My questions: 1 - is it ok to do this without compromising anything?
2 - proper way to thaw and work with the cake to fill&crumb coat
3 and more important, proper way to freeze the frosted cake
4 proper way to thaw the frosted cake so I can put the fondant on.

Thank you!

1)It's been done. Wether it's comprimised Depends on how long it's out of the fzr. You only have a *total* of 3-5 days for cake to retain it's taste & freshness.
2) Thaw, still wrapped, in frig overnigh is best. Work as quickly as possible
3) place in cake box, then put that into a plastic bag to fz. Be sure the filling is o.k. to fz.
4) same as ab ove.
