I am making a wedding cake for an outdoor wedding in early November here in North Carolina. The average daytime temperature for this area then is 64 degrees, average nighttime is around 40. I was planning a three-tiered stacked white cake with chocolate ganache filling and buttercream icing that contains whipping cream. The cake will be under a shelter and covered with a round top netting to keep the "critters" away. Would that cake be safe in that temperature if it is cold when delivered? The wedding is at 2:00 pm and the reception follows immediately beginning with a catered meal.
Thank you so much for your thoughts!

If you drive up with the cake at 1:45PM then it will keep cold for long enough, because it is so big. But if it is still out there at 5PM then ask the onsite caterers for advice.
