I had a request for a coconut pound cake flavor - does anyone have a recipe that works well for tiered cakes? I looked in the recipes section, and found a few, but they seem to be for loaf or bundt pans, so I'm not sure if it would work for a layer cake?!?

The pound cake will take forever to bake in the largest pan. You will have to use the magic cake strips to prevent serious humps.

It will work just fine to bake coconut pound cake in pans up to 10"round or 9" square.

I posted the Wilton pound cake recipe that they recommended for tiered cakes here http://cakecentral.com/modules.php?name=Forums&file=viewtopic&p=7313938&highlight=#7313938

You can just substitute coconut extract for the vanilla, and use Thai style coconut milk in place of milk. You can also add a reasonable amount of coconut flakes.

This is my favorite recipe for coconut pound cake. I always use coconut milk instead of regular milk.
