i need to make Green tea flavored buttercream. Anyone know of an extract or should i just brew some strong green tea, cool and use as my liquid in making buttercream? Ideas?

I've used Japanese matcha tea powder in a cake. It has a lovely taste.
The taste is really spring gras green tea, very fresh. The Japanese themselves use it a lot in pastry. It is expensive though when you buy a good quality.
It pairs good with white chocolate, pear.. passion fruit..
I've used it as well as a natural food colouring in my marzipan, wich turned out beautiful.

When you use to much you get the taste of grass, wich is not so.. icon_lol.gif Try a teaspoon first.

I am afraid just green tea won't work. I am not sure though. You can use just so little of a liquid in BC. I don't now if you will be able to get the flavour strong enough. When you make a reduction over fire it will probable get too bitter.. But I didn't try myself.

I agree with the above poster. Use fresh matcha (or very finely grind any green tea that you like the flavor of - must be very finely ground to not make the frosting gritty) and sift it with your powdered sugar. I have done this before to go with a green tea flavored cake. I used about 2 teaspoons of matcha to around 3 cups of powdered sugar. How much tea you use really depends on how strong of a flavor you want.

I use the Matcha. I ordered it online from teazonline.com. As was stated, if you use too much it will taste like grass. A little goes a long way! I use it in cakes, cookies and buttercream...

I agree with all of the previous posters - matcha green tea powder will give you a lovely green tea flavour and it will also lend a nice green tea colour to the icing without food dyes as well!

I think it's safe to say that matcha green tea is the safest one to use when it comes making a green tea buttercream frosting


Try this recipe and see if you like it or not

Ingredients

1 1/2 (about 6 ounces) sticks unsalted butter softened
2 1/2 cups confectioners sugar
2 tablespoon milk
1 tablespoon matcha green tea powder

Using an electric hand/stand mixer on medium-high speed cream the butter with one third of the sugar until well blended. Add in the remaining sugar one-third at a time, blending well between each addition. Add in the milk and matcha powder and beat until light and fluffy.
