I am doing a wedding cake for my cousin and his soon-to-be wife.
She wants gold fondant sprayed with gold luster spray.....but the fillings she requested requires the cake to be refridgerated.

Once fondant covered cakes come out of the fridge, they get sticky. How will the spray look once the cake is at the hall and becoming room temp? Will it run, drip etc?

Should I try to change her mind and have fillings that don't need to be refridgerated and save the final look of the cake?

Also....I will have the cake there around 4 and it won't be cut til later in the night, will the fillings still be ok if the cake is out on the fridge that long?

Thanks everyone for your help!

I would do a test run on a small cake and do exactly what you plan to do on the larger cake. I would be afraid it would run.

Is it possible to do everything but the luster dust then when you take it out of the fridge and it's completely dry that you spray it then?
If the test turns out to make a mess then in reality you are the baker, her choices are the design she wants and a non-perishable filling or the filling she wants and an altered design.
