I am a long time reader here and really appreciate everything I have learned. This is my first post and I am in need of ideas.
Icing Smiles has asked me to create a cake and I am SUPER excited except.....the child can not have sugar. Because of the dietary need, in have been contacted several months in advance. I have already done some research on recipes and will be testing a few. Any ideas for frosting or decorations? I greatly appreciate any ideas.....

Whew, that's tough! It is just cane sugar (sucrose), or does the allergy include all sugars (fructose, etc). I would work very closely with the family as they will know exactly what the child can/cannot have.

My first thought would be to use maple syrup or agave nectar as a sweetener, but again, I would check with the parents. I did find a link with several sugar free icing recipes:

Maybe use ganache to ice it with. There are many types of chocolate. Maybe there is one he can eat mixed with whipping cream. It will firm up when cool or you could even use whipped ganache.

Good luck that is tough.

I cannot remember the brand, but my cake supply store sells an icing that is sugar-free. They keep it in their refrigerator.

These are recipes that are made with Splenda. But as Jennifer from cupadeecakes suggested, you should check with the family to make sure that Splenda wouldn't be an issue for the child.

I was looking for recipes that would be suitable for a few diabetic people that will be attending a wedding. I haven't tried them yet, but they do look pretty good.

Other than that, I know that Pillsbury makes sugar free cake mixes and also sugar free frosting if you can find them in your area.
