Hello,
I have a request for a maple walnut ice cream cake. Does anyone have any suggestions for what to use for a crust and/or filling?

First of all you have to figure out what this order really means.

I would normally understand to be a frozen cake with layers of ice cream filling that must be kept frozen until serving time. For such a cake, you could start with a walnut chiffon cake, use google for a recipe. Or sponge cake with maple flavour added. Bake and when cold, slice into 1/2" thick layers. Put into a pan with layers of softened maple walnut ice cream and freeze the whole thing. Frost with whipped cream that maybe has maple sugar added.

Or else it might be a regular layer cake with maple and walnut flavours in the cake. The customer must confirm to you what it is they want, before you agree to make it.

I apologize that I didn't include more information in my original post.

In the past I have made an ice cream cake using crushed chocolate sandwich cookies as a base with a layer of chocolate ice cream, chocolate crunch pieces, a layer of vanilla ice cream, more chocolate crunch and a final layer of chocolate ice cream all topped with whipped cream.

A friend has asked for a similar cake for their birthday but with maple walnut ice cream. I am looking for a complimentary taste to use as the base and/or to layer between the ice cream. It can be the same for both the base and filling or something different. I am making the cake as as their gift so the choice of fillings has been left to me.

You could try vanilla cookies or wafers with walnut pieces for the crust. Or if they sell them where you are, the maple-leaf shaped sandwich cookies that are lightly flavoured with maple.

Use maple sugar in the whipped cream if you can buy it, it adds something really special. Maple extract can be very bitter.
