I'm going to be making a cinnamon apple cake for one of the tiers to a 3 tier wedding cake. But, I'm worried about the moistness in many of the recipes. And whether or not the layered cake will hold up in the stacking process.

Is there a recipe you prefer using for stacked wedding cakes with a cinnamon-apple cake?

Thanks SO much for you help! ( :

The support system is what holds the cake together when they are stacked.

Use a carrot cake recipe with grated raw apple in place of the carrots. Use the same volume, the moisture has already been adjusted. Use crisp apples like Gala or Fuji or Granny Smith. Use apple pie spice mix or cinnamon plus allspice. Use nuts, and raisins or currants, if the customer likes.

This will stack like a carrot cake. Difficult to slice into thinner layers, if you need 4 layers then bake them that way. This cake improves with 2-3 days aging on the counter.
