best white cake recipe - Page 4

Aw thanks gals!!!  I really appreciate your support - this has been a labor of love for so long and I have had a run of jusy absurd bad luck over the past few weeks I thought it would never get done.  Anyway thanks again and feel free to PM any questions you have.

PS  OMG it's expensive to sell that type of thing on Etsy and take credit cards and Paypal and all that other junk.  I'm sad at how high I had to price the item but there are so many corporations with their hands out just to let us little guys on their playground...  so anyway thanks for the support.

Hi FromScratch,

Etsy can be expensive and adding the option to take credit cards just makes it more so! But really, you will probably sell more in the long run accepting credit cards. I had an Etsy shop selling cupcake toppers for a short while, so I remember well. Sometimes I had a hard time keeping track of where the fees were coming from- oy!

Anyway, thank you for putting this together and making it available. Right after I cover this cake board, I'm heading over to Etsy to place my order. Super excited! Thanks again!!!

I had to pull it down - there were some pretty glaring typos.  Man, this past few days has been brutal.  Just brutal!  First my hard drive in my PC completely died.  Then the external back up didn't work, so I'm on a loaner laptop which is great - but none of the programs on it are newer then 2003.  I rushed out the etsy version but pulled it back down because the typos are BAD.  Anyway I'm fixing it and will re-post, and send corrected versions to anyone who has bought one so far.  Ug.  I miss my Cake Central editor that makes me sound so cool for the Cake Genius section of the magazine, because writing for a blog is WAY different then what I was trying to do on my own.  Anyway thanks again for the support!

Did I mention my 2 year old just chucked my new iphone 5s into the toilet yesterday?  Man I am having the worst luck with technology lately. Hahahahaha

That does NOT sound like a fun week! Computer crashes are so stressful, especially when we rely on them so much. And the phone...gotta love a 2 year old :D My daughter once flushed a toothbrush down the toilet. Not as expensive to replace but also not fun to fish out!!!!

And don't worry so much about the typos. I ordered my copy this morning!!! Yes, a few typos but not too bad at all! We are only human :) If you're like me, you will still stress about it but really, you're a great writer. It's not easy to write instructions so clearly that they are understandable to everyone. And you definitely did that! Also- my first batch of your white cake is in the oven as I type! Holy crap- I tasted the batter (at my own risk- lol) and it reminded me very much of a creamy egg nog (I used vanilla beans)!!!!! Maybe a weird comparison but I love eggnog! So, you made my day with this recipe. Thank you thank you for sharing and hang in there!!!!!

Thank you!!!  Well all the peeps that ordered the typo copy will get cleaned up copies, assuming I can figure it out.  Thank you for being understanding, its been a rough day of extra hate mail my way.

Oh No...! I so wanted to buy it!
I do have the recipe from the blog from before, but I wanted to ask a couple questions and I wouldn't want to ask without giving you proper retribution first. I hope it's back soon icon_smile.gif

Oh, no, our very own FromScratchSF does not deserve retribution!

ret·ri·bu·tion    ˌretrəˈbyo͞oSHən/   noun

  1. punishment that is considered to be morally right and fully deserved.
"settlers drove the Navajo out of Arizona in retribution for their raids"
synonyms: punishmentpenalty, one's just deserts; More

OMG! icon_surprised.gif
So sorry, English is not my first language, however in Spanish "Retribuir" means "To Give back". I guess I made a transliteration.

And that is what I meant. I'm sorry FromScratchSF!!

I meant to Pay you. icon_biggrin.gif

FromScratchSF is now selling her recipe (and it's many variations) on Etsy. Here's the link. It is well worth it :)

(The chocolate version was was even less succesful - not very "chocolatey" at all). Admittedly, i was biased and preferred to find a scratch recipe for several reasons. 1) If asked, I would prefer to say "of course it's from scratch, 2) I like to send along a list of ingredients with every cake (CYA regarding food allergies). Have you read the ingredients on a cake mix? Chemicals that I can't pronounce or tell you what they do, and I was a chemistry major in college. 3) I am mad at the cake companies for decreasing the size of the mixes, charging the same, and hoping no one would notice. 4) It is far more satisfying and gives me greater satisfaction to bake things from scratch. (I am a hobby baker and admittedly have less concern regarding time and cost than many folks might have.)

Having said all that, the BEST white cake IMHO is from Michelle Bratko and can be found at fromscratchsf.worldpress.com. Most white cakes I tried were dry and had a floury taste. The really good ones all had sour cream, cream or buttermilk added. That seems to be the key to a good white cake.

Since she has posted it and it is readily available, I hope she doesn't mind if I post it here. I may have altered a few things very slightly.

I LOVE this recipe.  It is hand down the number one choice that my customers ask for. It is also the favorite with my husband and extended family.  I had a bride come to taste test the difference between a true white cake, and this french vanilla sour cream cake recipe and she chose this one! YUM!

HIGH ALTITUDE ADJUSTMENT:   I have to decrease the sugar so it's not sticky, and for whatever reason if I use half regular sour cream half Tofuti Sour Supreme (dairy free sour cream)  it doesn't fall.  When I was first doing it with the whole cup of regular sour cream it kept falling.
