Hi all,
Cakes are best fresh imo, but I know a lot of bakers like frosting and decorating frozen cakes that have thawed out. How long should you freeze a cake in order to keep it good? (Example: Freezer burned, dry, etc.) Last thing I want to try is a very dry cake due to it being frozen for too long. Thanks!!

Frozen layers from wholesalers are typically labelled with a use by date of 6 months, however, if they are wrapped properly, you know they're still good for twice that long. First anniversary wedding cake top tiers are frozen for at least a year.

What if it's not wholesale? What if it's a cake you've made for an occasion like a wedding? I wouldn't add any fillings or icing/BC until after the cake is thawed out a bit.

It's the same concept... it's all just frozen cake (water, sugar, flour, oil, eggs, salt, baking soda).

Does it really matter how long you CAN freeze your layers? Are you planning to freeze them for more than 6-12 months anyway? I'm certain they'll freeze well for whatever reasonable time-frame that you're comfortable with, as long as they're properly wrapped.

I was just worried about freezer burn as I'm going to be freezing my wedding cake layers rather than making them a few days before the wedding. Thanks for the replies. icon_smile.gif

I freeze my cakes all the time. (It's the only way I can produce more than 2 cakes per weekend!) They are always very moist and fresh tasting.

But keep in mind that proper packaging and storage is a must! I wrap my cakes in 2 layers of cellophane, making sure to press out all the air. Then I wrap them in 2 layers of of tin foil.

You will *never!* have fzr burn if you wrap the layers in plastic wrap &/or a plastic bag. As was mentioned it depends on how long you expect to have them in the fzr. If it's less than 1 week (5 days), I just put them in a plastic bag. For longer storage they were wrapped in plastic wrap - usually 2 layers - then poped into the bag.
Be sure when you put them in the fzr they are placed on a cake circle or something like a cookie sheet so they fz flat. Once they have fzn you can remove that & stack the layers as much as you want/can.
