Special Mango Cake For Mom?? Need Help.

Hi Everyone,
I have been a lurker for several years and finally signed up last Holiday. I have done some scratch baking and some box mixes. Box is always fine and my scratch usually is ok. I want to work more on some scratch recipes. I have read alot on here and have learned so much.

Now my problem is that I want to make a scratch mango cake for my mom who is coming from out of state. She loves, loves mangos so that is what I want to make. My neighbor has a mango tree with ripe mangos so I want to use those. I don't have a scratch mango recipe. I have looked on here and don't know which one to use. Unfortunately, I don't have time to try different ones since she will be here in a few days. I guess I should have thought about this earlier. Can someone please point me in the right direction or possibly share their recipe with me?

I was also thinking about making a mango filling with mango BC. Will this be to much mango?

I was able to find 2 small bottles of the Loranns Mango flavor, but that was all they had.

I know I am asking alot, but I would really like to make this cake special. All help is greatly appreciated.

Mango extract seems to be the key when making mango cupcakes or a mango cake. Mangoes alone won't give you a really deep mango taste. Culinary Chronicles modified Cupcake Project's recipe for mango cupcakes.:

LorAnn sells two different kinds of mango flavour:

the extract (it comes in 1 ounce bottles and the drams) very good for baking and candymaking

the "flavor fountain" which is water based and coloured, but really good mango taste for boosting fruit puree.

Sorry I cant help with actual mango cake recipes but I have made a lime sponge cake and used fresh mango and creme fresh filling which was really nice. Something like that might be an option?

I just experimented with a couple online recipes this past weekend for mango cupcakes.

I tried the ones on the following sites:

Both recipes call for mango puree and mango extract. In addition, I also used Lala Mango Smoothie instead of the yogurt. I bought a mango beverage made with mango nectar, reduced it and brushed it on top of the finished cupcakes. Topped it with mango buttercream (which I just threw together using butter, powdered sugar, mango puree, mango extract and some of the mango smoothie), the mango coulis from the 2nd link and fresh mango slices.

I liked the actual cupcake recipe from the 1st link better. I was told by everyone who had one (about 25-30 people), that they were mango-ey, but not overwhelmingly so. Mango is a really mild flavor. I found that the cupcakes didn't have a very noticeable mango flavor so you actually need the mango frosting and coulis for flavor, and the fresh mango slices were really nice for texture. They were definitely a hit, even for a couple people who said they're not big mango fans.
