I have not yet done much with gelatin other than buy all of the supplies icon_rolleyes.gif , but I have a gelatin butterfly that was given to me at ICES Orlando (three years ago? or is it now 4? old age is tough). I live in an extremely humid area, and I have just left the little guy out in my kitchen all this time. He is still perfect - has not even faded in color. So I would say that, once properly cured, they will last forever as long as they are kept dry. I would just store them in something to keep the dust off.
