Rose,

What I do sometimes is take the pan I baked the cake in and turn it over so you are looking at the bottom/flat side. I cut my letters and arrange them on that side of the pan and try to estimate how they are going to fit with the other decorations. This can also help you figure out if a name or word is too long and if you have to write it with icing instead or use a smaller cutter. My cakes are all covered in buttercream so I just drop the letters on the cake and move them around with a toothpick. If you do this while the cake is still cold you won't leave any marks in the icing. I always chill my cakes after I ice them.

It irks me when letters are not straight or are off center.

I have found that a piece of wax paper is my best friend. I lay out the letters on the wax paper and make a small hole in the wax paper under each letter.

If I am not making the letters straight (but more semi circle) I will lay the wax paper on the cake itself and mark the area I want to stay in with a sharpie marker. I DO NOT press at all. If it's just straight lines I do my work on the back of the cake pan or on the table.

Then I put the wax paper on the fondant covered cake, and make a small dot (with a toothpick) where the bottom center of each letter would be. I know it sounds like a lot of work, but it really takes less time then trying to 'eyeball' it.

That is a great idea.

So maybe you can just take a piece of waxed or parchment paper and lay it on the cake. Then take a toothpick and make tiny pricks along the straight line, so you have kind of a very faint straight line of where the letters should be once you remove the paper.

Good luck Rose!
