How do I transport a cake 8 hours away

Hello cake experts. I have been asked to create a wedding cake for a good friend. The problem is that the wedding is 8 hours from where I live. I was thinking I would bake the cakes at home prior to the travel and then decorate there. Anyone have suggestions on how to keep the cakes fresh?

Freeze them and then transport in a cooler and thaw there?

Any suggestions would be greatly appreciated.

I traveled 7 hours with a wedding cake for a friend once. I baked on Wednesday, filled on Thursday, Iced/Decorated on Friday morning, put the unstacked tiers in my trunk and drove 8 hours Friday afternoon. I stacked the cake at the venue on Saturday. Pretty much like a normal cake (except I stack wedding cakes at home usually and deliver stacked).

I made sure none of the fillings or buttercream needed to be kept chilled so they wouldn't spoil.

I brought with me a repair kit with extra icing, bags and tips I used for the scroll work. I brought the support system with me and inserted it into the cake at the venue when I delivered it.

when i transported a cake that was 4 hours away in the WI/IL/IN area the heat was SO bad. make sure to keep the cakes in a cooler. I also suggest doing what you said about frosting and decorating there....sooo much can happen on the drive that the cakes can shift in the car no matter what you do. it would probably work in your favor to freeze the cakes with the filling/bc in between and let them thaw as you drive in a cooler to reduce the risk of breakage. to me, it sounds like you have a good plan of action icon_smile.gif
