Milk Chocolate Ganache??

Hello all,

When using milk chocolate instead of semi sweet, do you guys use a 3:1 or 2:1 ratio? I have seen both on line, and have tried both, but with inconsistent results. So I am confused. HELP!!!

I gave up trying to make milk chocolate ganache with milk chocolate. Even using the same brand and the same ratio it turned out variable.

Use a mix of dark chocolate and white chocolate--mixing each kind of ganache separately. Knead together to make the shade you want.

It's 3:1, but it really depends on the weather. If it's hot there, add a bit less cream, if it's cold, a bit more. I always err on the side of a bit less cream, because you can always nuke it for a few seconds to get it spreadable.
