I need to put together a dessert buffet for a baby shower. I would like to have a wide variety of desserts so I need to come up with a menu of deSserts that can be made in advanced, especially desserts that freeze well or desserts that can be made days in advance. Pls help with ideas. Thanks.
Here's one for the summertime: frozen lemon mousse in chocolate cups. Keep frozen until ready to serve.
James Beard published the lemon mousse recipe: you make an Italian meringue and fold in whipped cream and lemon juice. Sorry, I can't post the copyrighted recipe...please use google.
Are you doing a combination of cake candy puddings and fruits?
I always find dessert bars boring if they are filled with mostly cake things.
There's a lot that can be part of a dessert bar that can be done weeks in advance. And knowing the color also helps because dessert bars can really pop with a nice look.
I've done quite a few small pastry platters for dessert buffets and have found the following freeze well:
-italian butter cookies (the ones tinted green and red and flavored with almond)
-butter cookies (piped with star tip)-the end can be dipped in chocolate
-almond cake petit fours (frozen with the fondant icing)
-mini black and whites (or half moons as some people call them!)
-chocolate dipped brownies (cut into shapes and dipped)
-you can buy small sweet pastry shells and then fill with lemon curd or mousse and then decorate with a few berries (I've frozen the shells with no problem)
-any kind of cookie made into a bar like choc chip, blondies, etc...

Thanks you guys for all the wonderful suggestions. It really helps. It's going to be carnival themed so the table is going to be really colourful. I will use red, yellow, green and blue. I am doing the cake as well so I won't have much time for desserts. I would like to make most of them well in advance and then pop them into the freezer.
