Hi, so I'm fairly new to cake decorating and have just agreed to make a small wedding cake for a family friend. The cake will be carrot cake with cream cheese frosting, covered in fondant. I'm wondering about refrigeration issues with the cream cheese frosting, and I live on the west coast so humidity is an issue with the fondant. Also, the cake will be traveling for about 1.5 hours in an unrefrigerated vehicle in July....Any help will be great!

I would buy some of those plastic blue ice gel packs and freeze then and have them underneath the cake box to try to keep it cool for the trip (or freeze juice boxes). If you can find a large enough Styrofoam cooler that would be even better, or surround it with one or two of those freezer bags that you can buy in the market to keep food cold (or hot) .

It's not July, but the weekend was in the 80's/90's - I just traveled 3 hours with a cream cheese covered carrot cake and it did fine. We all wore jackets and had the air on full blast. No fondant though so I can't comment on that! I do think the pp gave great advice with ice packs and styrofoam though!
