Having said that, if your customer is asking for a "Mexican Vanilla" cupcake, she is looking for that artificial vanilla flavor - that's what they use in Mexico and that is what Mexican bakeries (at least the ones in CA that I know of) use. Pretty much any imitation vanilla should do.
