I can only get the already whipped. When you mix different flavors do you put it in your mixer and mix or just mix by hand?? Just wonder because I don't want to over whip and then it goes flat. Also can you add color to bettercreme?? I work at Hy-vee and they say you can't. Thanks!

You can add color to it but you can only get pastel colors. Also once the color is added and on the cake it will start getting lighter and lighter, the bettercream just seems to kinda "suck" the coloring up for some reason. The more color u add the more runny it will get. You can mix either way, fold it in by hand, or use a mixer. However if you use a mixer I would use the lowest speed and mix only to incorporate it, if you over mix it will get hard to use. Also keep it cold. If the bettercream warms up it gets a very airy with lots of air bubbles and it is impossible to get smooth and very hard to pipe with it as it will "spit" coming out of the tip. Once it gets airy just putting it in the fridge will NOT fix it, there is nothing I know of that will fix it. That has been my experience with Bettercream and I used to use it all the time in the grocery store where I decorated cakes. Hope this info helps icon_wink.gif
