I need some expert advice! I'm making the attached cake for a wedding this weekend. I made the petals out of gumpaste and I'll be covering the cake with fondant, just as it is in the picture.

My question is- how would you attach the petals to the cake?? Royal icing? "Gum glue" (gumpaste dissolved in water)?? I just want to be sure the petals won't fall off in transport. Thanks!

I would use royal icing myself and bring extra just incase you have one fall off along the way icon_smile.gif

those petals are definately made using gumpaste. You can use fondant strengthened w/Wilton's GumTex OR Tylose.
I don't think one will get the thinness necessary nor the right look using royal icing.
Use a cutter; roll the gp thin, cut then using a ball tool or toothpick ruffle & thin the edges. Dry them in an cardboard apple seperator from the grocery store to give them a nice slight curve.

The way I read it......

Cowie is suggesting to use royal icing to STICK the petals on

Check out the Satin Ice website - there is a RBI tutorial on there that uses a similar technique

Personally I would use melted white chocolate. It's just because it is easier for me. I don't use royal icing all that often and it is messy to make (hate PS flying everywhere!) so I just melt a bit of chocolate in the microwave and use that. Works perfectly.

My two cents worth? Royal Icing.
Because I'm in the Caribbean I've never ventured into using chocolate to stick anything. But is it really better or at least as good as royal icing? Other than powdered sugar flying everywhere, is there any other reason any of you would prefer using melted chocolate as 'glue'? And would it hold up in the heat and/or humidity that is usually present in the Caribbean?

I made this exact cake a few weeks back. I used sugar glue (water & fondant) to stick them on. Let the cake dry for alittle it and it will be fine.

Thank you all for your help. I used royal icing and it worked perfectly. I had to transport it about 60 miles and not a single petal fell off!

Here's my finished product. Not as good as the original, but I thought it turned out okay icon_smile.gif

I LOVE THIS CAKE!  No joke I saved it to my computer an hour ago because I need to make a petal cake and these petals are done perfectly. Great job. How did you "ruffle" the edges so well?  I have never made one before so if anyone has experience or a step-by-step tutorial for making the petals I am a newbie. Thanks in advance. Happy caking.

I stick fondant to buttercream all the time with just a bit of water. Piping gel works great too.

Great cake! Funny thing... I noticed the inspiration picture on one of my competitors websites. I had seen it before in other places. Plus, based on their other pictures, I highly doubt they made this particular one. It bothers me but since it isn't mine, I don't say anything. Hope no one is disappointed. But I digress...

I made this exact cake with buttercream last May in goo ole NC humidity using crusting buttercream and I attached the gumpaste petals by inserting and pressing into the buttercream for the base level.  If I needed any paste it was buttercream OR gumpaste glue depending on where the petals were needing to be attached. It was perfect and no petals fell off.  (we assembled petals on site, much easier and took no time)

Can anyone give me input on which cutter to use to make these petals? I don't currently have anything that large and so I'll need to purchase something to make the petals for an upcoming wedding this month.

I used my circles and formed them into rose petal shapes.  I needed some bigger ones, so I used the lid off one of my sprinkles bottles...worked like a charm.
