Do you use Macsmom's Carrot Cake recipe?

Hi all,

Macsmom has 2 recipes listed in her "Gourmet recipes" list. I have reached out to her but I thought I would ask here as well.

Do you use ever of these? Ideally I want to use her recipe with some of the additions but do you know if either of these are sturdy for stacking and carving (like the WASC original)?

Erica, I haven't used them but I can imagine carving would be tough. Stacking would be no problem. Something of interest...a member on here a while back, who is strictly a scratch baker, said that the Duncan Hines Premium (I think that's what it's called) mix has a carrot version which is quite good. You could probably make the modifications just like a regular WASC with the sour cream and sugar and stuff.

The new Duncan Hines Premium carrot cake mix is a really, really good cake. Very moist, flavorful and so very much like a scratch cake mix. I have tried many carrot cake recipes and have always been disappointed, but this one is one I will use. I haven't tried it any other way but as directed on the package since I just tried it last weekend for our personal cake for Easter dinner, but will keep reading this topic to see what others sayicon_smile.gif

Luckily my carving need is rather simple, nothing intricate. I also plan to leave out things like raisins and nuts to help with the carving, and when adding carrots and such ill make sure the pieces are very small. I think I just need a good sturdy cake to withstand th wait of the fondant and added details

The Duncan Hines mix has carrots and raisins in a pouch mixed together after soaking them in water as part of the recipe. I would imagine that you could pick the raisins out, but the raisins are soft after baking, so don't think the raisins would cause a problem with carving, because there aren't a lot of themicon_smile.gif. But if you wanted to add nuts you could put then through a food processor and chop them fairly fine. Shouldn't be a problem. Hope that helps icon_smile.gif

I actually tried her carrot cake recipe and carved a skate board ramp with it. I had to issues at all. It was pretty dense !!!
