I don't usually decorate cakes with buttercream - preferring fondant...but I have an order for one with gumpaste decorations on the top and sides of the cake. What kind of buttercream is best for this - crusting? Will the gumpaste decorations just stick to the side of the cake? And once decorated can it be refrigerated? Thanks for your help in advance!!!

Fondant will stick to just about anything, fresh buttercream or Italian Meringue Buttercream. Won't stick to crusted buttercream so just put a dab of fresh buttercream on the back of the fondant before applying. If using IMBC then nothing is needed. Will stick beautifully and yes you can refrigerate.
