Ok, so this lady wants a cake next weekend. I told her I wasn't available. She is persistent. She wants to know if I can make the cake and she can freeze it until she needs it. I told her that would not work because she wants all kinds of cute fondant figures on it and I doubted they can be frozen. She wants me to research it, and she says she will take responsibility if it is inedible. (which is ludicrous. Why would I go to so much trouble for it to possibly be pitched?) So here I am. Can you freeze a fondant covered cake?

Yes you can but you must not. It will be slimy when defrost.

If she wraps the box in a couple of layers of plastic wrap and freezes it, it's no problem. Defrost in the fridge with wrapping still on the box. Bring to room temp with wrapping still on the box. Remove wrapping. No condensation should get on the cake if it's done like this. If she wants the fondant figures, hand them over to her separately and tell her how to stick them on once the cake has defrosted.
