Thanks in advance for helping me with this......I have a request for a fondant covered cake with a lemon custard filling. My question is, does it have to be refrigerated? I usually fill the cakes the day before covering in fondant, so that they settle and I don't get that bulge. Any advice as to what to do before covering in fondant and after it's covered in fondant prior to delivery, would be greatly appreciated! Thank you so much!

I always refrigerate. I don't want to chance it turning and getting people sick. You can still do it the day before only put it in the fridge.

What about after I've covered it in fondant? Won't putting it in the refrig ruin the fondant? Maybe I'll go with a lemon buttercream.
