Hi-

I'm trying to replicate one of my family's favorite cakes from a local bakery.

It has one layer lemon, one layer orange, one layer lime, with a European buttercream frosting.

I'm trying to make these from scratch, not using mixes. Anyone have favorite recipes for each flavor?

TIA!

Sarah

Hi Sarah,

Welcome to CC.

For your cake, do you have a favorite yellow or white cake that you can start with?

If so, you can change the flavors in each layer with zest and extract. I use organic, natural extracts from Olive Nation. If you use juice, you can sometimes throw off the structure of the cake with too much liquid or too much acid. If you can't get extracts, reduce the juice on the stove to get a high concentration. This is really all you need to do.

In your buttercream, from your post I'm thinking you have this recipe, use what the bakery used, probably one of the three.

If you need a base recipe, pm me and I can share my Key Lime cake that you can just change the zest and extracts.

You can also use Boyajian Citrus Oils. They sell a kit with small bottles of each flavor you crave in your post.

The trick to using oils is to use them very sparingly, as their flavor profiles are intense.
