I made chocolate ganache last night to fill and ice my cake with today. I followed the recipe from the video by inspired be michelle..2 parts chocolate 1 part cream...I put it in the fridge over night like she said and when I took it out this morning it was solid..it has been sitting on my counter since 9am and its now 430 and it is no longer cold to the touch but is so hard i can hardly get my knife through it...I am obsessing about how I made it and the only thing I can think is maybe I didn't add enough cream? Can I put it in the microwave and just warm it up and add more cream? This cake was just a practice cake I was making so Im not on a time crunch just hate that I may have wasted so much money (the first batch seized up and I had to toss it)

I used the ghiradelli dark choc chips 36oz and 18oz heavy cream..for some reason I have it in my head that I may have only added 16oz cream...TIA

I would melt it a little and add the rest of the cream. If that doesn't work add a little vegtable oil to it that should smothe it out. Hope that helps.
