gum paste recipe questions...

I guess I have a couple questions here...

First off, I need to make some gum paste today but don't have tylose (only have Gum Tex). Can tylose and Gum Tex be used interchangeably? If so, what is the ratio?

Second, I've seen a lot of recipes that I could make with Gum Tex...but they all seem to use Knox gelatin. I attempted one of those recipes, but it was a complete failure. The gum paste ended up with globs of what I'm assuming was the hardened gelatin throughout and it was super hard and crumbly... And that was before the last cup of sugar that was supposed be added after sitting overnight. I guessed it was a gelatin issue and have been scared to try a recipe with gelatin ever again. I have used the Wilton recipe off the Gum Tex can, and that gum paste seems to work really well when I mix it 50/50 with fondant...but on its own it seems really soft. It isn't sticky, just really, really soft and squishy. Is that how it is supposed to be? I tried adding a little more sugar to the soft gum paste, and it just got dry and had that elephant skin look...I'm not sure what I am doing wrong!

Obviously I need some help here!! Thanks for any tips!

I have a container of Wilton Gum-Tex and there is a recipe on the back for making gum paste and it doesn't need gelatin.

It is:

1 Tbsp Gum -Tex
4 Cups (or 1 LB) sifted confectioner's sugar
1 heaping Tbsp glucose
4 Tbsp warm water

I will give you the instructions if you are interested. Let me know. I don't want to type them all out if you don't want them.

Happy Baking!

Here is a post from the wilton Forums asking the same question. I think the answer is yes:

I made the Wilton gum paste once and had the same experience as you, too soft, and I left it for 24 hours too.

I just buy Satin Ice ready made. Sorry the recipe I posted before is off the can you already have. I should have read it better, sorry about that.

Good Luck
