Vanilla Cake

Customer (my niece) has requested a vanilla cake with pineapple filling. I make a white cake for birthdays and such that people refer to as a vanilla cake. Although, most of the time I add almond flavoring because that's what my friends and family like. I did it once and eventually that's what people started asking for - - my "almond white" cake. This niece hasn't really had any of my cake that I can think of. Her mom is helping her with the wedding and said, vanilla cake, pineapple filling. So, I know she's not had my almost white....

So, I've never really focused on anything else. I am realize you can just make a cake taste more vanilla by using vanilla instead of almond flavoring.....but what ratio should I use? 1 tsp flavoring per batch of cake mix? That's what I do with my almond....

Maybe I should make sure she's actually wanting "vanilla" cake versus just a white cake? But, either way, I'd really like to know.

I make a vanilla cake that tastes like a vanilla cake. I think I got the recipe here on CC.
It's a WASC
2bxs Wht cake mix
2cps flour
2cps sugar
1/4 cp oil
1 1/3 cp water
1 1/3 cp liq vanilla coffee creamer
6 eggs
3 6oz cont. vanilla yogurt
1 sm pkg inst vanilla pudding
2 1/2 tsp vanilla paste(or 1 TBS van. ext)
( I use paste)

Vanilla is less strong compared to almond. You can ask the bride if she really wants vanilla as a pronounced flavor or as you are thinking, just a white cake. I am very heavy handed with a combination of homemade vanilla and vanilla bean paste. You can add quite a bit before it gets to be too much. Also, vanilla and almond make a great combination. If you really like the taste of your almond cake, you could cut back slightly on the almond, for example maybe half, and still add a teaspoon or two of vanilla. Personally I add several tablespoons.

Whenever I want a more pronounced vanilla flavor I add vanilla bean paste to the vanilla already called for in the recipe.
