Smbc Help!!!

Hey guys

Ive made a batch up of SMBC and ive done all the steps right

5 large, fresh egg whites (150 g/5 oz)

1 1/4 cups (250 g/9 oz) sugar

3/4 lb (3 sticks/340 g/12 oz)

Ive added the butter...........and i just cant seem to ge the mixture to come together, it seems like theres moisture still in the mix and its sliding around the in the bowl ive put it back into the fridge and still has not come together. I also kept mixing it with a whisk ( i have no paddle nor electric mixer) and still not come together.

Need to have it fixed by tomorrow, what to do icon_cry.gificon_cry.gificon_cry.gif

It doesn't sound like you beat it long enough for it to emulsify.
Take a look at this link. I think you'll find it very helpful. And if you post a comment on the thread, Jen will post an answer pretty quick.

This is the recipe and method I follow and I've never had any issues.

If you have a paddle use that, otherwise keep beating it with the whisk. It will come together. Sounds like it was too warm when the butter was added.

Are you trying to mix this by hand with a wisk? If so, I honestly doubt that it'll come together before your arm falls off..............sorry.
