I have to make a 3 tier topsy turvy for my aunt's 50th birthday party next Sunday. I have never frozen cakes before. I work full time so if I bake Monday and Tuesday, how do I freeze the layers? Also, when would I need to take them out of the freezer? This will be my second topsy turvy, only my first was just 2 tiers. I also have never ganached before. Do you think I need to ganache the tiers or will the support system be enough to keep it stable? Thanks for any help you can give!!
Wrap the baked and cooled cakes in Saran wrap and freeze. They thaw pretty fast. Maybe 1-2 hours?
I freeze cakes all the time, it works perfectly, just allow a few hours for thawing, I know some even carve their cakes while partially frozen. I'm not much help with topsy turvy cakes, I do love how ganache makes such crisp straight edges, and then cover with fondant. There are so many video dealing with ganache, so if you search you'll find out alot of information.
