There's a mold for gerbera daisy centers on the green silicone wilton flower impression mat.

Before I got the mold, I used to just roll a small ball of paste, flatten it slightly and then poke all over it with a plastic lollipop stick or small round tip.

I do this too, but imprint with a new piece of wire mesh screen for the texture.

I usually flatten a ball of yellow gumpaste/ fondant and then us my pastry tip that is used for making grass and just press over your center with that. Works great for me...

When I did these daisies, I rolled a ball for the centers, slightly flattened them, then dusted them with yellow cornmeal:

I'm taking the new Wilton Course 4, Advanced Gum Paste Flowers. The second flower we learned is the Gerbera Daisy. I posted some photos of that process and what the center looks like using the mold that came in the student kit (it's slightly different than the older Wilton mold; not sure which one I like better):

I like that idea of using the grass tip #233! I will definitely give that a try.
