Hello

I normally cover my cakes with a layer of marzipan, then a layer of fondant. I'm set on making my sister's wedding cake, but she told me that she is absolutely certain that she does not want a cake covered in fondant. So now I was thinking to make her a cake covered in either butter cream or cream cheese frosting and then decorate it with butter cream / cream cheese scrolls and gumpaste roses.

So I was just wondering if it will be possible to put gumpaste flower on cream cheese frosting or butter cream without it destroying the gumpaste flowers? Will any of the color from the gumpaste flower bleed onto the cake? Also, what about piping? I only every piped with royal icing, is it even possible to pipe with cream cheese frosting?

If at all possible I'd really prepfer to go with cream cheese frosting over buttercream, as we prefer the cream cheese taste much more.

Thanks.

Do your steam your g/p flowers to set the color(dust)? I love the taste of the original cream cheese icing. Make it all the time. I think you will have a hard time piping scrolls with c/c icing. There is a decorators c/c icing recipe on this site and on this site(Designmeacake.com) she is a member here. I first made it some years back, using earlene moores recipe(earlenescakes.com) . So check this recipe out and try it to see if you like it . The original recipe is the best, but this will pipe better. The g/p flowers should not bleed onto your cake. I have never had that problem before with reg. b/c or decorators c/c b/c. Haven.t tried it with reg. c/c icing. hth
