I have not done much with dummy cakes. If i want to cover it with fondant Should i be covering the styrofoam with buttercream or royal icing? Or can i just spritz it with some water and have fondand stick that way? Also was curious about tiered cakes. If i am going to be transporting the cake do i just put royal icing between tiers to keep from shifting? Or do i have to run a center dowel?
When it comes to covering with fondant, I just put the fondant on the dummy, no need for icing in between.
I have used a very light spritz of water, piping gel, corn syrup, and a spread of crisco to attach the fondant.
Some royal icing, piping gel or candy melts would work great to hold tiers together. You can do a dowel if you want to. The only time I have done a center down the middle is when I was traveling long distances with it.
I just lightly dampen the dummy. Fondant does great after that. I used melted chocolate to hold them together. Also, I usually sand the edges just a slight bit with a super high grit sandpaper before I roll the fondant on.
I massage the dummy with shortening. Makes it really easy to peel the fondant off so that I can re-use the dummy. Also makes it easy to reposition the fondant while working.
