I am making a cake for tonight with cream cheese icing. The monster sized cake wont fit in my fridge. It would only be iced and out of the fridge for an hour tops and I was going to put it in my garage which is about 40 degrees today. Any one think its a bad idea? It would obviously be covered and there are no vehicles in the garage. Thanks = ]
If it will only be out for an hour before you serve it, I don't think it needs to go in the garage at all...most foods that need refrigeration can sit out for two hours.

The Health Department will tell you that you have a 4 hour window - - but that's max. If it's only going to be out about an hour, you're good.

I don't agree with this. I assume you are making American crusting buttercream that has cream cheese in it (like all the recipes posted on CC). It's shelf stable and does not need refrigeration.

I'm confused, how can you work on a cake for three days that isn't refrigerated, yet it will only be at room temperature for an hour or so while it's being iced or before it's served?
