WASC sucks for cupcakes. Cupcakes come out way too rubbery and airy. I think it has to do with the extra egg. I do a lot of gratis cakes, so I do use mixes occasionally. I have just started using a straight box mix for cupcakes and baking them at 350. I hate cupcakes so I don't feel like screwing with them that much. Everyone loves them when I do them without any extra stuff.
I have a lot of scratch recipes that don't do well as cupcakes. Some recipes are like that. If you check the scratch off thread (I think it's the one for the white cake) people talk about the cupcakes shrinking too much or not rising properly.
There's something about baking the batter in a smaller size with a comparatively large surface area against the pan.
It's just another reason why I hate cupcakes, LOL.
