Help Needed Piping Swirls Onto Cookies

Dear CC members,

I thought i would have a go at piping 'swirls' onto cookie pops to make them look like lollipops I saw a picture of some and was inspired to try myself, but it was a disaster. I flooded my cookie with white royal icing and then proceeded to pipe the blue swirl into the still wet icing. initially it looked fine but soon both colours started to merge with eachother and I'm not sure what I've done wrong? Should I have used a 'soft peak consistency of blue RI rather than runny and/or should i have waited until the white had dried more before i piped my swirl? Any advice would be very well recieved.

Hi Lucycoo, normally you do not use RI on cookies but use Color Flow instead. Recipe is here: http://www.wilton.com/idea/Color-Flow.

You could either be making it too liquidy and everything is bleeding & blending together or maybe you can try a different technique. Trying to pipe the white first and then allow it to set a bit before adding the blue swirls. I would also try to add a bit more icing sugar as well and see which technique works better for your cookies! Best of luck (:

I use a modified royal icing on my cookies. Wilton Colorflow is simply royal icing with too much egg white.

I would also not recommend letting the icing set up before adding the next color. The first thing to set up will be a skin on the top of the icing. You'll only make a bigger mess if you try to swirl anything into it at that point.

Lucy, your icing is too thin. To check for the right consistency for flooding, a ribbon of icing dropped back into the bowl should disappear after a FULL count of ten seconds. It's okay if you still see a little remnant. If it disappears before 10 seconds, it's too thin. For your purposes, you might want to try making it slightly thicker.

You are correct to add the second color immediately after the first color for the reason stated above.

I agree that the consistency is key, regardless of what you ice your cookies with. Diane described it perfectly.

I can totally picture the cookie 'lollipops', what a great idea! icon_biggrin.gif
